update dockerfile and put a code to use latest stockfish version always without changing it when a latest sf dev version comes it automatically gets the latest binary from abrok.eu so its good and changed to bullseye-slim

Hello I have set to true the polyglot opening books so that bots can use polyglot opening books in opening then the engine moves which will make bot play faster and better. tomorrow ill add a few more good books like the famous goi5.bin and perfect2021.bin and also cerebellummerge.bin and many more of the best bin books.
