fix(deploy): extract the client sources without restoring ownership
The compose service runs as root with cap_drop ALL (only DAC_READ_SEARCH
added back), so tar's default root behaviour of restoring the archived
uid/gid failed on every entry with "Cannot change ownership", exited 2 and
aborted the entrypoint before the server started. --no-same-owner keeps the
copy owned by the extracting user, which is all the throwaway build tree needs.
